About This Coffee
This fully washed microlot comes from Murambi coffee washing station (CWS), one of 2 stations operated by Murambi Coffee in Muramvya district, in Burundi's central highlands. The CWS operates at an altitude of 1,640masl and process cherries from neighbouring smallholder farmers. Farmers typically cultivate a small amount of land and produce arabica of the Bourbon variety, which thrives at these high altitudes.
THE PROCESS
Ripe cherries are delivered to the CWS where they are hand sorted and floated to separate by density, to select only the highest quality for processing. These cherries are de-pulped and then fermented for up to 18-24 hours to breakdown the remaining mucilage. The parchment coffee is then washed in clean water grading channels and placed on raised African beds to dry in the sun for 2-3 weeks. During this period the coffee is raked and turned to ensure consistent a drying process, and covered at night or during periods of rain or intense sun to protect the coffee from damage. Once the coffee is dried to 12% moisture it is bagged and rested in parchment for at least 1 month until it is ready for secondary processing which involves hulling, grading by bean size and hand sorting to remove any remaining defects.
