About This Coffee
This is a specially prepared natural process microlot from ETS Nduwayezu in Gashikanwa District, Ngozi province, Northern Burundi. The station receives cherry of the Bourbon variety from around 3,000 smallholder farmers in the surrounding hills, with altitudes ranging between 1750 and 1800masl.
THE PROCESS
At its arrival at the washing station, matured cherry is selected through water flotation and the picking team sorts the cherries in order to keep only cherries of high quality. This step is important for fine processing. After careful selection the cherries are dried in the sun on raised African beds, being turned consistently to ensure even drying, and covered in midday sun.
